Soup



We went to one of my favourite stores "Anthropologie" in Berkeley. I love looking at the interior displays, the clothes then I noticed the book cover of a soup book sitting in one of the rustic tables. I scanned through the pages...the layout is fantastic, the photography excellent and the recipes seems delicious, healthy (when you omit the cream) and looks uncomplicated.

Here's my first go with the recipe in the Soup Book of Bar à Soupes owner Anne-Catherine Bley. I added the cilantro/corriander and a tiny bit of potato noodles just to add texture into the soup as you have it.

Ingredients : olive oil, onions, celery, carrots, apples, black pepper, parsley and water.

My husband had seconds on a 100% healthy meal.
